Ingredients

- 1½ – 2 lbs boneless chicken thighs
- 1 lb baby Dutch potatoes
- 3 cups broccoli florets
- ⅓ cup olive oil
- 3 cloves garlic, minced
- 3 tbsp lemon juice
- 2 tsp lemon zest
- 1 tbsp Dijon mustard
- 1 tsp each: salt, pepper, basil, oregano, onion powder
- ½ tsp each: paprika, cumin, thyme, sugar
Optional Sauce:
- 1 cup Greek yogurt or sour cream
- ¼ cup grated Parmesan
- ¼ cup chopped parsley
- 1 tbsp lemon juice
- Dill, chives, salt, pepper to taste
Instructions

Marinate chicken in the lemon garlic mixture for 20–240 mins.

Roast potatoes for 15 mins.

Add broccoli & chicken, bake 17–22 mins more.
