One-Pan Lemon Garlic Chicken & Veggies

This all-in-one dinner is fresh, flavorful, and requires almost no cleanup. Juicy lemon-garlic chicken thighs roast alongside baby potatoes and green beans—weeknight magic in under 40 minutes.

    Ingredients (serves 4):

    4 bone-in chicken thighs
    1 lb baby potatoes, halved
    2 cups green beans, trimmed
    3 tbsp olive oil
    Juice of 1 lemon
    4 garlic cloves, minced
    Salt, pepper, Italian seasoning
    Instructions:

    Preheat oven to 425°F.
    Mix olive oil, lemon juice, garlic, and seasoning.
    Toss potatoes and green beans with half the marinade. Arrange on a baking sheet.
    Rub remaining marinade on chicken and place on top.
    Roast for 30–35 mins, until chicken is golden and veggies are tender.
