Wet Ingredients:

1 and 1/2 cups granulated sugar

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

2 cups grated zucchini (squeezed dry)

1/2 cup chopped walnuts or pecans (optional)

Streusel Topping:

1/2 cup all-purpose flour

1/4 cup packed light brown sugar

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 cup cold unsalted butter, cut into small pieces


Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan or line with parchment paper.

  2. Mix dry ingredients: In a medium bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.

  3. Mix wet ingredients: In a large bowl, beat together sugar and vegetable oil until well combined. Add eggs one at a time, mixing well after each. Stir in vanilla.

  4. Combine: Add grated zucchini and stir to incorporate.

  5. Combine wet and dry: Gradually mix dry ingredients into the wet mixture until just combined. Fold in chopped nuts, if using.

  6. Prepare streusel topping: In a separate bowl, mix flour, brown sugar, granulated sugar, and cinnamon. Cut in cold butter until crumbly.

  7. Assemble and bake: Pour batter into the loaf pan. Sprinkle streusel topping evenly over the top.

  8. Bake for 60–70 minutes or until a toothpick inserted in the center comes out clean.

  9. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra moist bread, avoid overmixing the batter.
