Ingredients

6 cups seedless watermelon, peeled and chopped

¼ cup granulated sugar (or honey/agave)

¼ cup fresh mint leaves (lightly packed), plus extra for garnish

½ cup boiling water

1¾ cups cold water

⅓ cup fresh lime juice

Ice cubes, for serving

Optional: lime slices or mint sprigs for garnish

Instructions

Step 1 – Make Mint Syrup:
In a heatproof bowl, combine sugar and mint leaves. Pour in boiling water and stir until sugar dissolves completely. Let cool for 20 minutes. Strain to remove the mint.

Step 2 – Blend:
In a blender, add chopped watermelon, strained mint syrup, cold water, and lime juice. Blend until smooth.

Step 3 – Strain and Serve:
Strain the mixture through a fine-mesh sieve. Pour over ice into glasses. Garnish with mint or lime if desired.

Notes

  • Use very ripe watermelon for the sweetest flavor.

  • Replace sugar with honey or agave for a more natural version.
