- 1 recipe of homemade or store-bought Italian dressing
- 1 (20 oz) bag of refrigerated cheese tortellini
- 1 cucumber, peeled, sliced, and cut into quarters
- 1 pint of cherry tomatoes, halved
- 1 (6 oz) can of black olives, drained and halved
- 1 orange bell pepper, seeded and finely chopped
- 2 tablespoons of chopped pepperoncini
- 8 oz of fresh mozzarella balls, quartered
- 8 oz of sliced salami, roughly chopped
- Optional toppings: crumbled feta, shaved Parmesan, chopped fresh parsley
Instructions
- Prepare Italian dressing and refrigerate until ready to use. Shake before serving.
- Cook tortellini in salted water as directed. Rinse with cold water and drain well.
- Add warm tortellini to a bowl and toss with half the dressing.
- Add all remaining ingredients and gently mix to combine.
- If serving soon, toss with the rest of the dressing and chill for 30 minutes.
- If serving later, cover and refrigerate without the remaining dressing. Add it just before serving.
