Tortellini Pasta Salad – The Best Easy Italian-Inspired Side Dish

Ingredients

  • 1 recipe of homemade or store-bought Italian dressing
  • 1 (20 oz) bag of refrigerated cheese tortellini
  • 1 cucumber, peeled, sliced, and cut into quarters
  • 1 pint of cherry tomatoes, halved
  • 1 (6 oz) can of black olives, drained and halved
  • 1 orange bell pepper, seeded and finely chopped
  • 2 tablespoons of chopped pepperoncini
  • 8 oz of fresh mozzarella balls, quartered
  • 8 oz of sliced salami, roughly chopped
  • Optional toppings: crumbled feta, shaved Parmesan, chopped fresh parsley

 

Instructions

  1. Prepare Italian dressing and refrigerate until ready to use. Shake before serving.
  2. Cook tortellini in salted water as directed. Rinse with cold water and drain well.
  3. Add warm tortellini to a bowl and toss with half the dressing.
  4. Add all remaining ingredients and gently mix to combine.
  5. If serving soon, toss with the rest of the dressing and chill for 30 minutes.
  6. If serving later, cover and refrigerate without the remaining dressing. Add it just before serving.
