- 1 sweet potato, diced
- 1 tbsp olive oil
- ½ red onion, diced
- 1 clove garlic, minced
- 2 bell peppers, chopped
- 1 jalapeño (optional), finely diced
- 2 green onions, chopped
- 1 tbsp fresh rosemary, chopped
- 4 eggs
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced sweet potato, cover, and cook for 8–10 minutes, stirring occasionally.
- Add red onion and garlic. Sauté for 2–3 minutes until fragrant.
- Add bell peppers and jalapeño. Cook uncovered for 5 minutes.
- Stir in green onions and rosemary.
- Create 4 wells in the mixture and crack an egg into each. Cover and cook for 3–5 minutes until eggs are done to your liking.
- Serve hot and enjoy!
