Ingredients

  • 2 green onions, chopped
  • 1 tbsp fresh rosemary, chopped
  • 4 eggs

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced sweet potato, cover, and cook for 8–10 minutes, stirring occasionally.
  2. Add red onion and garlic. Sauté for 2–3 minutes until fragrant.
  3. Add bell peppers and jalapeño. Cook uncovered for 5 minutes.
  4. Stir in green onions and rosemary.
  5. Create 4 wells in the mixture and crack an egg into each. Cover and cook for 3–5 minutes until eggs are done to your liking.
