- 2 ¾ cups cake flour
- 2 ½ teaspoons baking powder
- 2 cups white sugar
- 1 (3 oz) package strawberry flavored Jell-O®
- 1 cup butter, softened
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- ½ cup strawberries, pureed
- 1 ½ cups heavy cream
- 2 tablespoons sugar
- ½ teaspoon vanilla extract
- 1 ½ cups fresh strawberries, sliced
- ½ cup margarine, softened
- 1 (8 oz) package cream cheese, softened
- 4 cups confectioners’ sugar
- 2 teaspoons vanilla extract
- 1 ½ cups quartered strawberries
Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 9-inch cake pans.
- Beat sugar, strawberry Jell-O®, and butter until fluffy.
- Add eggs one at a time, mixing well after each.
- In a separate bowl, mix flour and baking powder. Add alternately with milk.
- Fold in vanilla extract and pureed strawberries.
- Divide batter into pans and bake for 25 minutes.
- Let cool in pans for 10 minutes, then invert and cool completely.
- Whip heavy cream with sugar and vanilla until stiff.
- Layer cake: 1/3 whipped cream + ¾ cup sliced strawberries between each layer.
- Beat margarine, cream cheese, confectioners’ sugar, and vanilla for frosting.
- Frost sides of cake and pipe border around the top.
- Spread remaining whipped cream on top and decorate with quartered strawberries.
