Strawberry Cream Cake

  • 2 ¾ cups cake flour
  • 2 ½ teaspoons baking powder
  • 2 cups white sugar
  • 1 (3 oz) package strawberry flavored Jell-O®
  • 1 cup butter, softened
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • ½ cup strawberries, pureed
  • 1 ½ cups heavy cream
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • 1 ½ cups fresh strawberries, sliced
  • ½ cup margarine, softened
  • 1 (8 oz) package cream cheese, softened
  • 4 cups confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 1 ½ cups quartered strawberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch cake pans.
  2. Beat sugar, strawberry Jell-O®, and butter until fluffy.
  3. Add eggs one at a time, mixing well after each.
  4. In a separate bowl, mix flour and baking powder. Add alternately with milk.
  5. Fold in vanilla extract and pureed strawberries.
  6. Divide batter into pans and bake for 25 minutes.
  7. Let cool in pans for 10 minutes, then invert and cool completely.
  8. Whip heavy cream with sugar and vanilla until stiff.
  9. Layer cake: 1/3 whipped cream + ¾ cup sliced strawberries between each layer.
  10. Beat margarine, cream cheese, confectioners’ sugar, and vanilla for frosting.
  11. Frost sides of cake and pipe border around the top.
  12. Spread remaining whipped cream on top and decorate with quartered strawberries.
