Description

Smashed Cucumber Salad – A fresh, crunchy, and creamy salad with avocado, feta, pistachios, and a zesty lemon dressing. Perfect for summer!


Ingredients

4 Persian cucumbers (or 1 English cucumber)

1 medium ripe avocado, diced

¼ cup crumbled feta cheese

¼ cup chopped pistachios

¼ cup chopped fresh dill

¼ cup chopped fresh chives

23 tablespoons extra virgin olive oil

1 tablespoon lemon juice (freshly squeezed)

1 tablespoon Dijon mustard

2 teaspoons honey

2 garlic cloves, peeled and minced

Salt, to taste

Black pepper, to taste


Instructions

  1. Prepare the cucumbers:

    • If using Persian cucumbers: Smash each one with the flat side of a knife, then chop into bite-sized pieces.

    • If using an English cucumber: Slice in half lengthwise, smash, then chop into bite-sized pieces.

  2. Combine ingredients: In a large mixing bowl, add cucumbers, diced avocado, crumbled feta, pistachios, dill, and chives.

  3. Make the dressing: In a small bowl, whisk olive oil, lemon juice, Dijon mustard, and honey.

  4. Add garlic and seasoning: Mix in minced garlic, salt, and pepper to taste.

  5. Toss the salad: Pour the dressing over the cucumber mixture and toss gently until coated.

  6. Serve: Serve immediately for maximum crunch, or chill for 10–15 minutes before serving.

Notes

For extra flavor, add a pinch of chili flakes to the dressing.

Can be made ahead: Prepare cucumbers and dressing separately, then combine just before serving.
