Ingredients
32 oz (about 4 cups / 900 g) whole milk ricotta cheese
1 large egg
1/2 – 3/4 cup granulated sugar (adjust to taste)
1 1/2 cups all-purpose flour + extra for shaping
1/2 teaspoon baking powder
1 teaspoon vanilla extract (optional)
Oil for frying (olive oil works great)
Optional Toppings: fresh berries, maple syrup, powdered sugar, whipped cream
Instructions
-
In a large mixing bowl, whisk together ricotta cheese and egg until smooth.
-
Gradually add the sugar, mixing until fully incorporated.
-
Sift flour and baking powder together in a separate bowl.
-
Add dry ingredients to the ricotta mixture and stir until a smooth batter forms.
-
(Optional) Mix in vanilla extract for added flavor.
-
Heat oil in a skillet over medium heat.
-
Scoop batter into the skillet, shaping into pancakes.
-
Cook until bubbles form on top, flip, and fry until golden brown on both sides.
-
Serve warm with your choice of toppings.
Notes
For extra fluffiness, separate the egg and fold whipped egg whites into the batter.
Let the batter rest for a few minutes before cooking for a tender texture.
