Baklava

  • 20 sheets good quality phyllo dough
  • 2 sticks unsalted butter, melted
  • 1 lb walnuts (pulsed)
  • ½ lb pistachios (pulsed)
  • 1½ cups light brown sugar
  • Zest of 1 lemon and 1 orange
  • 2 tsp cinnamon
  • 1 tsp cardamom
  • 1 tsp ginger
  • Pinch of salt
  • Whole cloves (for decoration)

Citrus Honey Syrup

  • 1 cup sugar
  • 1 cup honey
  • ½ cup water
  • Juice of the lemon and orange used above

Instructions

  1. Preheat oven to 375°F. Mix nuts, sugar, zest, and spices.

  2. Butter a 13×9 pan, layer 7 sheets phyllo with butter between each.

  3. Add 1 cup nut mix. Add 3 more phyllo layers. Repeat until done.

  4. Top with final phyllo layers, cut, garnish with cloves.

  5. Bake 30 mins until golden. Cool.

  6. Make syrup by boiling water and sugar, then add honey and juice. Cool syrup and pour over cooled baklava.
