½ cup cold unsalted butter (1 stick), diced into small cubes

¼ cup boiling water

1 tablespoon coarse sugar (optional, for topping)


Instructions

  1. Preheat the Oven
    Preheat your oven to 375°F (190°C).

  2. Prepare the Peach Filling
    In a large bowl, mix sliced peaches, ½ cup granulated sugar, lemon juice, cornstarch, vanilla extract, and cinnamon (optional). Let the mixture sit for 15 minutes.

  3. Make the Topping
    In a separate bowl, whisk together flour, ½ cup granulated sugar, baking powder, and salt.
    Add in the cold diced butter, and use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.

  4. Add Boiling Water
    Gradually pour in ¼ cup boiling water, mixing until a thick dough forms.

  5. Assemble the Cobbler
    Pour the peach mixture into a baking dish.
    Drop spoonfuls of the dough on top, spreading lightly.
    Optional: Sprinkle coarse sugar over the topping for crunch.

  6. Bake
    Bake in the preheated oven for 30–35 minutes, or until the topping is golden brown and bubbly.
