Ingredients
1 3/4 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, melted
1/2 cup fresh orange juice
1/4 cup milk
2 large eggs
1 tbsp orange zest
1 tsp vanilla extract
Instructions
-
Preheat oven to 350°F (175°C).
-
In a large bowl, whisk together dry ingredients: flour, sugar, baking powder, baking soda, and salt.
-
In another bowl, combine wet ingredients: melted butter, orange juice, milk, eggs, orange zest, and vanilla.
-
Fold wet ingredients into dry, mixing until just combined (do not overmix).
-
Spoon the batter into a greased or lined muffin tin, filling each cup about 2/3 full.
-
Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
-
Allow muffins to cool for a few minutes in the pan, then transfer to a wire rack.
-
Enjoy warm or at room temperature. Optional: serve with orange creamsicle truffles for a citrusy dessert pairing.
Notes
Do not overmix the batter—this helps keep the muffins light and fluffy.
For an extra twist, add chopped nuts, berries, or shredded coconut to the batter.
