Ingredients

3/4 cup all-purpose flour

1/2 teaspoon baking powder

1/8 teaspoon kosher salt

2 large eggs

1/3 cup granulated sugar

2 tablespoons orange blossom honey

2 teaspoons vanilla extract

1/2 teaspoon finely grated orange zest

5 tablespoons unsalted butter, melted and cooled (plus more for greasing)

Instructions

  • Prepare the Batter
    In a medium bowl, sift together the flour, baking powder, and salt. In a large mixing bowl, use an electric mixer to beat the eggs and sugar on high until pale and thick—about 4 minutes.

  • Flavor & Fold
    Beat in the orange blossom honey, vanilla extract, and orange zest. Gently fold in the dry ingredients until just combined, then carefully fold in the melted butter. Avoid overmixing.

  • Chill
    Press plastic wrap directly onto the batter’s surface and chill for at least 3 hours (or overnight for deeper flavor).

  • Bake
    Preheat the oven to 400°F (200°C). Brush madeleine molds with melted butter and place the pan on a baking sheet. Spoon 1 scant tablespoon of batter into each mold.

  • Finish Bake for 10 minutes, or until golden and springy to the touch. Invert pan and gently knock out madeleines. Serve warm.

Store in an airtight container for up to 3 days at room temperature
