Ingredients

1/4 cup all-purpose flour

2 tablespoons grated Parmesan cheese (optional)

2 tablespoons fresh chives, finely chopped

1/3 cup sour cream

Salt to taste

2 eggs, beaten


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix chilled mashed potatoes with shredded cheese.

  3. Stir in flour, Parmesan cheese (optional), and chives.

  4. Add sour cream and season with salt to taste.

  5. Mix in beaten eggs until well combined.
