Ingredients
3 cups chilled mashed potatoes
1 cup shredded cheese (cheddar, mozzarella, or preferred melting cheese)
1/4 cup all-purpose flour
2 tablespoons grated Parmesan cheese (optional)
2 tablespoons fresh chives, finely chopped
1/3 cup sour cream
Salt to taste
2 eggs, beaten
Instructions

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, mix chilled mashed potatoes with shredded cheese.

Stir in flour, Parmesan cheese (optional), and chives.

Add sour cream and season with salt to taste.
