- 4 salmon fillets (6 oz each)
- 2 lemons (1 sliced, 1 juiced)
- 1 tbsp each fresh dill, parsley, thyme
- 3 tbsp olive oil
- 2 cups each broccoli, carrots, bell peppers
- Salt & pepper (to taste)
- 3 garlic cloves, minced
Instructions
- Preheat oven to 400°F. Line baking sheet with parchment.
- Toss veggies with 2 tbsp oil, half the garlic, salt, and pepper. Roast 15 mins.
- Rub salmon with 1 tbsp oil, remaining garlic, lemon juice, herbs, salt, and pepper. Place on sheet with lemon slices; bake 10-12 mins.
- Rest 5 mins, then serve.
Notes
- Swap veggies as needed (e.g., zucchini).
- Check salmon at 145°F (USDA).
- Store leftovers in fridge for 2 days; reheat gently.
