Oat Crust
- 1 cup (80 g) quick-cooking oats
- 1½ cups (180 g) all-purpose flour
- 1 cup (200 g) light brown sugar, packed
- ¼ tsp baking soda
- ¼ tsp baking powder
- ¾ cup (170 g) unsalted butter, melted
Lemon Filling
- 1 can (14 oz) sweetened condensed milk
- ½ cup (115 g) freshly squeezed lemon juice
- 2 large egg yolks
- 1 tsp lemon zest
- ⅛ tsp kosher salt
Instructions
- Preheat oven to 350°F and line a 9×9-inch pan with parchment.
- Mix oats, flour, sugar, baking soda, and powder. Stir in butter until crumbly.
- Reserve ½ of the mixture for topping. Press the rest into the pan and bake for 12–15 minutes.
- Mix condensed milk, lemon juice, egg yolks, zest, and salt. Pour over crust.
- Top with reserved crumble. Bake 20–25 minutes until edges are golden.
- Cool to room temp, then chill for 1 hour before slicing.
