Oat Crust

  • 1 cup (80 g) quick-cooking oats
  • 1½ cups (180 g) all-purpose flour
  • 1 cup (200 g) light brown sugar, packed
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¾ cup (170 g) unsalted butter, melted

Lemon Filling

 

  • 1 can (14 oz) sweetened condensed milk
  • ½ cup (115 g) freshly squeezed lemon juice
  • 2 large egg yolks
  • 1 tsp lemon zest
  • ⅛ tsp kosher salt

Instructions

  • Preheat oven to 350°F and line a 9×9-inch pan with parchment.
  • Mix oats, flour, sugar, baking soda, and powder. Stir in butter until crumbly.
  • Reserve ½ of the mixture for topping. Press the rest into the pan and bake for 12–15 minutes.
  • Mix condensed milk, lemon juice, egg yolks, zest, and salt. Pour over crust.
  • Top with reserved crumble. Bake 20–25 minutes until edges are golden.
  • Cool to room temp, then chill for 1 hour before slicing.
