Ingredients
2 large sweet potatoes, scrubbed clean
2 tablespoons olive oil
Salt, to taste
Pepper, to taste
1 tablespoon honey, warmed
⅓ cup crumbled feta cheese
Fresh thyme leaves (optional, for garnish)
Red pepper flakes (optional, for a hint of heat)
Instructions

Preheat oven to 425°F (220°C).

Slice sweet potatoes into ½-inch thick rounds.

In a mixing bowl, toss slices with olive oil, salt, and pepper until evenly coated.

Arrange in a single layer on a baking sheet.

Roast for 20–25 minutes, flipping halfway, until tender and lightly golden.

While baking, warm honey until fluid.

Once potatoes are done, drizzle with honey.

Sprinkle with feta cheese.

Garnish with fresh thyme leaves and red pepper flakes, if desired.
Notes
Use parchment paper on the baking sheet for easier cleanup.
Try substituting goat cheese for feta for a tangier flavor.
