1 ½ pounds thin-sliced boneless skinless chicken breasts (about 4 pieces)

12 ounces salsa verde (Trader Joe’s recommended or homemade)

3 tablespoons olive oil

2 tablespoons freshly squeezed lime juice

1 teaspoon ground cumin

1 teaspoon salt (adjust to taste)

1 teaspoon freshly ground black pepper

4 slices Pepper Jack cheese (or more as desired)

Fresh cilantro, finely minced (optional, for garnish)

Lime wedges (optional, for serving)


Instructions

  1. Marinate the Chicken:
    In a large bowl or zip-top bag, combine salsa verde, olive oil, lime juice, cumin, salt, and black pepper. Add the chicken breasts and toss to coat. Marinate in the fridge for at least 30 minutes, preferably a few hours or overnight.
  2. Preheat Grill:
    Set your grill to medium-high heat. Lightly oil the grates.
  3. Grill the Chicken:
    Remove chicken from marinade and place directly on the hot grill. Grill each side for about 5–7 minutes or until internal temperature reaches 165°F.
