- 4 boneless chicken breasts (1.5 lbs)
- 4 cups fresh spinach
- 4 garlic cloves, minced
- 1 cup heavy cream (or coconut cream)
- ½ cup grated Parmesan (or nutritional yeast)
- 2 tbsp olive oil
- 1 small onion, diced
- ½ cup chicken broth
- Salt, pepper, and ¼ tsp red pepper flakes (optional)
Instructions
- Prep: Mince garlic, dice onion, rinse spinach.
- Cook Chicken: Season chicken with salt and pepper. Heat oil in a skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden (165°F). Set aside.
- Make Sauce: Sauté onion 2-3 minutes until soft. Add garlic, cook 30 seconds. Pour in broth, scrape bits. Stir in cream and Parmesan, simmer 3-4 minutes until thick.
- Add Spinach: Stir in spinach until wilted (1-2 minutes). Season to taste.
- Serve: Return chicken to skillet, spoon sauce over, simmer 2 minutes. Serve hot.
