- 2 cups elbow macaroni (dry)
- 2 cups shredded cheddar cheese
- 3 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 1 tsp salt
- ½ tsp black pepper
- ½ cup breadcrumbs (optional)
Instructions
- Boil Pasta: Cook macaroni in salted water until al dente (8-10 min). Drain, don’t rinse.
- Make Roux: In the same pot, melt butter over medium heat. Whisk in flour, cook 1-2 min until golden.
- Add Milk: Slowly pour in milk, whisk, simmer 3-5 min until thickened.
- Melt Cheese: Off heat, stir in cheese until smooth.
- Combine & Bake: Mix in macaroni, season with salt and pepper. Optionally, transfer to a greased dish, top with breadcrumbs, bake at 375°F (190°C) for 15 min.
