1 ½ cups diced bell peppers (red and green)
1 pint cherry tomatoes, halved
1 cup English cucumber, diced
½ cup red onions, finely diced
⅓ cup fresh cilantro, roughly chopped
¾ cup Cotija cheese (or feta)
Dressing:
3 tbsp avocado oil or olive oil
¼ cup lime juice (or lemon juice)
2 tbsp apple cider vinegar
1 tbsp honey
1 tsp Dijon mustard
1 tsp each: salt, dried parsley
½ tsp black pepper
¼ tsp each: cumin, garlic powder, chili powder
