Chocolate Coffee Cookie Crust:

2 cups Oreo cookies (about 22 cookies)

1 tsp instant espresso powder

4 tbsp (59 ml) unsalted butter, melted

Coffee Cheesecake Filling:

3 tbsp instant espresso powder

2 tbsp (30 ml) warm water

¾ cup (180 g) sour cream, room temp

¼ cup (59 ml) heavy cream, room temp

4 blocks (8 oz. each) cream cheese, room temp

1¼ cups (250 g) granulated sugar

2 tsp (10 ml) vanilla extract

3 large eggs, room temp

1 large egg yolk, room temp

Chocolate Coffee Ganache:

¾ cup (177 ml) heavy cream

1 tsp instant espresso powder

6 oz. (170 g) semi-sweet chocolate chips

Shaved chocolate bar (optional, for topping)


Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan. Prepare a water bath by boiling water and setting aside.

  2. Make the crust: Pulse Oreos into crumbs. Mix with espresso powder and melted butter. Press into pan base and chill.

  3. Dissolve espresso in warm water. Whisk in sour cream and heavy cream. Set aside.

  4. Make the filling: Beat cream cheese until smooth. Add sugar and blend well. Mix in espresso-cream blend and vanilla. Beat in eggs and yolk on low, one at a time.

  5. Bake: Pour filling into crust. Place springform pan inside a 10” pan, then into roasting pan with hot water. Bake 65–75 min. Center should jiggle.

  6. Cool down: Turn off oven, crack the door, and let cool inside for 1 hour. Remove and cool on rack 1 hour more. Chill 6+ hours or overnight.

  7. Make ganache: Heat cream and espresso. Pour over chocolate chips and let sit 3 mins. Stir until smooth.

  8. Finish: Pour ganache over cold cheesecake. Top with shaved chocolate. Chill 15–20 mins to set.
