Ingredients

1 pound flank steak

1/4 cup fresh lime juice (about 2 limes)

1/4 cup olive oil

1/4 cup fresh cilantro, chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup cooked rice (white or brown)

1 can black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup red onion, diced

1/2 cup crumbled feta cheese (optional)

Extra cilantro for garnish

Lime wedges for serving


Instructions

1.Marinate the Steak

In a medium bowl, whisk together:

Lime juice

Olive oil

Chopped cilantro

Minced garlic

Ground cumin

Chili powder

Salt & black pepper

Add flank steak and coat well. Cover and marinate for 30 mins – 2 hours in the fridge.

2.Cook the Steak

Heat a skillet or grill over medium-high heat.
Cook steak 5–7 mins per side (for medium rare).
Rest for 5 mins, then slice against the grain.

3.Prepare the Bowl Base

While steak cooks, prepare your bowl base:

Cook rice and fluff

Mix beans, corn, tomatoes, red onion, and avocado in a bowl

4. Assemble the Bowls

In each bowl:

Add a layer of rice

Spoon in the veggie mixture

Add sliced steak

Top with feta (if using)

Garnish with cilantro & lime wedges

5. Serve

Serve warm, and enjoy the burst of zesty, smoky, and creamy flavors in every bite!

  • Make it low-carb: Use cauliflower rice instead of regular rice.
