1 tbsp fresh oregano (or 1 tsp dried oregano)

1 small shallot, peeled and finely chopped

2 cloves garlic, peeled and minced

1/2 jalapeño pepper, seeded and finely chopped

1 tbsp fresh lemon juice

1 tbsp apple cider vinegar

1/2 cup olive oil

1 tsp kosher salt

Fresh ground pepper to taste

For Chicken Thighs:

2 lbs boneless skinless chicken thighs

Kosher salt to taste

Fresh ground pepper to taste

Instructions

  1. Prepare Chimichurri Sauce:
    In a food processor, combine cilantro, parsley, oregano, shallot, garlic, and jalapeño. Add lemon juice, apple cider vinegar, olive oil, salt, and pepper. Pulse until finely chopped and well mixed.

  2. Marinate Chicken:
    Season the chicken thighs with salt and pepper. Coat with 1/4 cup of chimichurri sauce. Marinate in the refrigerator for 20 minutes to 24 hours.

  3. Grill Chicken:
    Preheat your grill to medium-high heat. Grill chicken thighs for 5-6 minutes per side, or until the internal temperature reaches 165°F (75°C)

  4. Serve:
    Serve the chicken with extra chimichurri sauce on the side for dipping.
