Ingredients
For Chimichurri Sauce:
1/2 cup fresh cilantro, finely chopped
1/2 cup fresh Italian parsley, finely chopped
1 tbsp fresh oregano (or 1 tsp dried oregano)
1 small shallot, peeled and finely chopped
2 cloves garlic, peeled and minced
1/2 jalapeño pepper, seeded and finely chopped
1 tbsp fresh lemon juice
1 tbsp apple cider vinegar
1/2 cup olive oil
1 tsp kosher salt
Fresh ground pepper to taste
For Chicken Thighs:
2 lbs boneless skinless chicken thighs
Kosher salt to taste
Fresh ground pepper to taste
Instructions

Prepare Chimichurri Sauce:
In a food processor, combine cilantro, parsley, oregano, shallot, garlic, and jalapeño. Add lemon juice, apple cider vinegar, olive oil, salt, and pepper. Pulse until finely chopped and well mixed. -
Marinate Chicken:
Season the chicken thighs with salt and pepper. Coat with 1/4 cup of chimichurri sauce. Marinate in the refrigerator for 20 minutes to 24 hours. -
Grill Chicken:
Preheat your grill to medium-high heat. Grill chicken thighs for 5-6 minutes per side, or until the internal temperature reaches 165°F (75°C) -
Serve:
Serve the chicken with extra chimichurri sauce on the side for dipping.
