1 tablespoon mayonnaise
1 teaspoon Dijon mustard
3 medium lacinato kale leaves
3 ounces thinly sliced cooked chicken breast
6 thin red onion slices
1 firm apple, cut into 9 slices
Instructions
- In a small bowl, mix mayonnaise and Dijon mustard until smooth.
- Spread the mixture evenly on the kale leaves.
- Top each kale leaf with 1 ounce of sliced chicken breast, 2 slices of red onion, and 3 slices of apple.
- Roll each kale leaf into a wrap.
- Cut the wraps in half if desired, and serve.
