  • 1 Red Delicious apple, chopped
  • 1 Granny Smith apple, chopped
  • 2 tablespoons lemon juice
  • 2 cups matchstick carrots (precut)
  • ¼ cup yellow onion, finely diced
  • ⅓ cup dried sweetened cranberries
  • ½ cup vanilla yogurt
  • ¼ cup mayonnaise
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup canned mandarin segments, drained

Instructions

  1. In a large mixing bowl, combine the chopped apples with lemon juice to keep them from browning.
  2. Add the carrots, onion, cranberries, and mandarin segments to the bowl.
  3. In a small separate bowl, whisk together the yogurt, mayonnaise, sugar, salt, and pepper.
  4. Pour the dressing over the salad ingredients and toss gently until evenly coated.
