- 1 Red Delicious apple, chopped
- 1 Granny Smith apple, chopped
- 2 tablespoons lemon juice
- 2 cups matchstick carrots (precut)
- ¼ cup yellow onion, finely diced
- ⅓ cup dried sweetened cranberries
- ½ cup vanilla yogurt
- ¼ cup mayonnaise
- 1 tablespoon sugar
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup canned mandarin segments, drained
Instructions
- In a large mixing bowl, combine the chopped apples with lemon juice to keep them from browning.
- Add the carrots, onion, cranberries, and mandarin segments to the bowl.
- In a small separate bowl, whisk together the yogurt, mayonnaise, sugar, salt, and pepper.
- Pour the dressing over the salad ingredients and toss gently until evenly coated.
- Cover and refrigerate for 15–30 minutes before serving. Enjoy chilled!
