For the Blueberry Thyme Sauce:

1 cup fresh blueberries (reserve a few for garnish)

2 tbsp balsamic vinegar

1 tbsp honey

2 tsp fresh thyme leaves (or 1 tsp dried thyme)


Instructions

  1. Season chicken breasts with salt and black pepper.

  2. Heat olive oil in a skillet over medium-high heat.

  3. Sear chicken for 6–7 minutes per side, until golden brown and cooked through (internal temp: 165°F).

  4. Mix sauce ingredients: In a small bowl, combine blueberries, balsamic vinegar, honey, and thyme.

  5. Add sauce to the skillet with the chicken.

  6. Simmer for 3–4 minutes, stirring occasionally, until sauce thickens slightly.

  7. Garnish with reserved blueberries and serve hot.

Notes

For best flavor, marinate chicken in olive oil, thyme, blueberries, and lemon juice for at least 30 minutes before cooking.

Frozen blueberries can be used — thaw and drain well before adding.
