1 lb boneless, skinless chicken breast or thighs, sliced thin

Sauce Ingredients

½ cup chicken broth

2 tbsp light soy sauce

2 tbsp apple cider vinegar

2 tsp dark soy sauce

1 tbsp cornstarch

1½ tbsp sugar

2 tsp coarsely ground black pepper

⅛ tsp salt

Stir-Fry Ingredients

2 tbsp peanut oil or vegetable oil

1 tbsp fresh ginger, minced

2 garlic cloves, minced

½ medium white onion, chopped

2 bell peppers (mixed colors), chopped


Instructions

  1. Marinate the Chicken: In a bowl, mix soy sauce, vinegar, and cornstarch. Add sliced chicken, toss to coat, and marinate for 30 minutes.

  2. Prepare the Sauce: In a separate bowl, whisk chicken broth, soy sauces, vinegar, cornstarch, sugar, black pepper, and salt. Set aside.

  3. Heat the Wok: Heat oil over medium-high heat in a large wok or skillet.

  4. Sauté Aromatics: Add ginger and garlic. Stir-fry until fragrant (about 30 seconds).

  5. Cook the Veggies: Toss in onions and bell peppers. Cook for 2–3 minutes until just tender.

  6. Cook the Chicken: Add marinated chicken to the pan. Stir-fry until browned and cooked through (about 5–6 minutes).

  7. Add Sauce: Pour in the sauce. Stir continuously until it thickens and coats the chicken (about 2–3 minutes).

  8. Serve: Remove from heat and serve over rice, noodles, or in wraps.

Notes

For added crunch, add cashews or water chestnuts.
