- 2–3 ripe bananas, mashed (about 2⅓ cups)
- 2 cups all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup butter, softened
- ¾ cup brown sugar
- 2 large eggs, beaten
- 8 g vanilla
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- Mix flour, baking soda, and salt in a bowl. Set aside.
- Cream butter and brown sugar until fluffy. Add eggs and vanilla; mix well.
- Stir in mashed bananas, then gently fold in dry ingredients until just combined.
- Pour batter into loaf pan and smooth the top.
- Bake for 60-65 minutes or until a toothpick comes out clean. Tent with foil if browning too quickly.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
