¼ cup (66 g) sour cream (or Greek yogurt)

1 ½ tsp baking powder

½ tsp baking soda

1 ½ tsp ground cinnamon

Pinch of allspice

¼ tsp coarse kosher salt

1 ¾ cups (210 g) all-purpose flour

For the Topping:

1 tbsp butter, cool room temperature

¼ cup (50 g) granulated sugar

1 tsp ground cinnamon


Instructions

  1. Reduce Cider: In a saucepan, simmer 1½ cups apple cider over medium heat until reduced to about ¾ cup. Cool slightly.

  2. Cream Butter & Sugars: In a mixing bowl, beat together butter, granulated sugar, and brown sugar until creamy.

  3. Add Wet Ingredients: Mix in eggs, sour cream, and oil. Stir in cooled reduced apple cider.

  4. Mix Dry Ingredients: In a separate bowl, whisk flour, baking powder, baking soda, cinnamon, allspice, and salt.

  5. Combine: Gently fold dry ingredients into wet mixture until just combined. Do not overmix.

  6. Bake: Pour batter into a greased 9-inch cake pan. Bake at 350°F (175°C) for 30–35 minutes, or until a toothpick comes out clean.

  7. Prepare Topping: Mix sugar and cinnamon in a small bowl. Blend with softened butter.

  8. Finish: Spread topping over warm cake. Cool slightly before slicing.
