Ingredients
For the Genoise:
3 eggs
8 g vanilla extract (1 tbsp)
1 cup sugar (200 g)
Pinch of salt
1 cup cake flour (120 g)
For the Caramel Whipped Cream:
2 cups heavy whipping cream (500 ml)
1 cup powdered sugar (120 g)
1 tsp vanilla extract
¼ cup caramel sauce (60 ml)
For Decoration:
½ cup toasted sliced almonds
¼ cup caramel sauce (for drizzle)
Instructions

Preheat oven to 320°F (160°C). Grease a 12×12 inch square pan and line with parchment paper.

Beat eggs, sugar, vanilla extract, and salt for 10-15 minutes until frothy and tripled in volume.

Sift in the cake flour gently and fold into the egg mixture with a spatula.

Pour the batter into the prepared pan and bake for 20-25 minutes. Cool completely.

Cut the cooled genoise into two 20×20 cm squares.

Whip heavy cream and powdered sugar until stiff peaks form. Add vanilla extract and caramel sauce, mixing gently.

Place the first genoise square on a serving plate. Spread half of the caramel whipped cream on top, followed by a sprinkle of toasted almonds.

Place the second genoise square and repeat with the remaining caramel whipped cream and toasted almonds. Drizzle with caramel sauce.

Chill for 30 minutes before slicing and serving.
Notes
- For a more intense caramel flavor, use homemade caramel sauce.
- Toast the almonds carefully to avoid burning them.
